Boiled chicken meat without skin corresponds to most strict diets. Though, fried chicken and chicken broth shouldn’t be included in the ration of the elderly and children. Turkey is considered one of leanest meat products. Turkey fat is rich in valuable polyunsaturated fatty acids. Goose meat is assimilated just like chicken, though it contains more fat. Canard contains many hard saturated fats, but at the same time –rich in vitamin А. Generally, canard and goose meat is hard for digestion. Rabbit meat is considered the slightest; it contains many lipotropic substances. That’s why it can be included in the ration of atherosclerosis, anemia and liver patients. The elderly are recommended to restrict meat consumption especially fat meats. And for all the other people meat should be no more than supplement to main dishes. It’s enough to take 100 grams of meat per day; remaining proteins should be obtained from other products. Profound effect has the method of culinary processing. Chopped meat is digested easier than lump, that’s why many diets recommend forcemeat dishes. Boiled and steamed meat contains less harmful substances than fried, stewed and smoked meat. As to meat makes – sausages, frankfurters, ham, tinned meat, beckon – they should be consumed as rarely as possible, since their production involves nitrites for meat coloring in pink or red colors instead of its natural reddish-black color. Allergenic children and adults aren’t recommended to eat broiler meat because of antibiotics contained in them.
